I started rifling through the freezer to see what might be a candidate for the smoker. I found this prime roast that needs to be consumed. I rubbed it with some garlic infused oil olive and then put a beef rub on it consisting of kosher salt, pepper, garlic powder, onion powder and an off the shelf Porterhouse steak & roast rub. I'll let it set for about 4 - 5 hours and go to the smoker with it.



If this doesn't make your mouth water, nothing will! Just came out of the smoker and now some rest time.


After 20 minute rest, I had to cut into it. BTW, I pulled it off at 138 IT.

Okay. . .that looks mouth watering!
But can you do that while boondocking?

Of course I could. I have a small smoker that I take camping with me when that is part of the trip menu. It is a propane smoker so anywhere I have a tank is a suitable smoking location.

I'm tempted to take the slow cooker along. . .I can see myself soon pulling a small trailer for extra stuff.
The slow cooker probe is optional. . .the cooker has a manual mode also. The probe can be set so that heat is turned to "warm" when it reaches a programmed temperature. 140 degrees is minimum cook temp.

I was thinking a Dutch Oven might be good for camp cooking instead of the electric slow cooker.
But your propane smoker sounds interesting.
Do you have a model make recommendation?

Okay, I started with an old "bullet style" stacker grill. I just use the bottom grate if I'm grilling and use the stack grate if I'm smoking. Went to a bbq internet site and bought a burner for $15 + a hose I had and some fittings. I think you can kind of get the idea.
